Breakfast: Our Favourite Pancakes

We love pancakes. They're the perfect weekend treat year round, but with Pancake day quickly approaching and an excuse to eat pancakes for every meal, that's certainly not something that we're going to miss out on. We'll be taking full advantage - breakfast pancakes, lunch pancakes, dinner pancakes... snack pancakes?? 

In celebration of this, we'll also be sharing a selection of our favourite (very much tried and tested) pancake recipes, starting with our ultimate breakfast pancakes. They're sort of like our banana bread in pancake from, in other words: delicious.


Makes 8-10 pancakes


- 3 ripe bananas
- 1/3 cup coconut oil
- 4 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups almond flour
- 2 tsp baking soda
- pinch of salt
- 1 tbsp cinnamon 


1. Mash the banana or blend until smooth
2. Add the melted coconut oil, eggs and vanilla and mix
3. In a separate bowl, combine the almond flour, baking soda, salt and cinnamon
4. Combine both mixtures until fully mixed
5. Add a 1/2 tsp coconut oil to a pan over a medium heat then add the mixture to the pan 1/4 cup at a time
6. Fry for 2-3 minutes per side until cooked then store in a low-heated oven to keep warm until you have finished the whole batch
7. Serve with berries, coconut yoghurt and a drizzle of honey
