Recipe: Spiced Winter Brownies

Our spiced winter brownies were a clear favourite when they hit shelves last Christmas, so this year we're sharing the (very much tried and tested) recipe for you to make at home - perfect for winning over those 'free-from' skeptical family members/co-workers/friends (because yes, we all still have them). They're a 10/10 on chocolatey-ness, and thanks to the cinnamon, nutmeg, cloves and cranberries, they encapsulate everything great about Christmas.  


Spiced Winter Brownies

Serves 18 

Gluten free | Wheat free | Dairy free | Refined sugar free | Vegan

 

METHOD

1. Preheat the oven to 200C
2. Melt the coconut oil and cacao butter together in either the microwave or a pan over a low heat
3. Mix all the dry ingredients together in a large bowl
4. Add the melted coconut oil and cacao mixture, as well as the cranberries, water, vanilla extract and orange zest
5. Mix well and flatten evenly into a lined tray
6. Sprinkle the cranberries and crushed pistachios on top, and press in gently
7. Bake for 10 minutes, then leave to cool before removing from the tray
8. Store in the fridge for up to one week, or the freezer for up to 3 months
 

INGREDIENTS

- 1/2 cup flaxseed
- 2 cups almond meal
- 2 1/2 cups cocoa powder
- 2 tsp gluten free baking powder
- 1 1/4 cups maple syrup
- 5 tsp cinnamon
- 2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp salt
- 100g coconut oil
- 100g cacao butter
- 1/2 cup water
- 1 tbsp vanilla extract
- 2 cups dried cranberries
- zest of 1 orange 

TO DECORATE: 

- 1/2 cup crushed pistachios
- 1/2 cup dried cranberries
