Recipe: Kale + Carrot Bright Box

Introducing: The Tupperware Series. When we switched from biodegradable packaging to our current boxes (you can read more about this here) we chose boxes sturdy enough to be reused, with the hope that people would add them to their tupperware drawers, rather than let them be single use. So this year, our recipes will centre around this - tupperware-proof breakfast and lunch recipes, portioned out to fit perfectly in our boxes, which we hope encourages tupperware drawers as healthy as ours… Here’s the first of the series: our delicious Kale + Carrot Bright Box.

KALE + CARROT
BRIGHT BOX   

GF WF DF VE
Makes x2 lunch boxes or serves 2

INGREDIENTS

- 2 handfuls kale
- 6 chantenay carrots or 2 large carrots
- 42.5 tbsp extra virgin olive oil
- 1 tbsp maple syrup
- 1 cup cooked black rice
- 1 avocado
- 1/4 cup (a small handful) alfalfa sprouts
- 3 tbsp hemp seeds
- 1/2 tsp clementine juice

DRESSING

Option 1:
- 4 tbsp shop bought pesto
- juice of 1 clementine

Option 2:
- 4 tbsp Hazie’s Homemade Pesto
- juice of 1 clementine

METHOD

  1. Peel + chop carrots into chunky matchsticks - if using chantenay, simply cut them in half lengthways.

  2. Blanche the carrots in hot boiling water for 3 minutes. Drain and place on a baking tray. Coat in olive oil, maple syrup and salt.  Bake at 180C for 45 mins.

  3. Cook the black rice in water with a little salt. Once cooked, pour onto a tray to cool. Once cool season with Himalayan salt.

  4. Cut/de-stem the kale if necessary, then massage with 1/2 tbsp olive oil, a squeeze of clementine juice and a pinch of Himalayan salt.

  5. Make the pesto if you’re using your own. Mix 4tbsp of pesto with the juice of a clementine and set aside.

  6. Chop the avocado into cubes/slices

  7. Once the carrots have cooked, leave them to cool before assembling your lunch boxes.

BOXING UP

  1. Put 1 large handful of massaged kale to each box

  2. Add 1/2 cup rice per box

  3. Divide the carrots evenly between the boxes and mix the ingredients together slightly.

  4. Scatter with half the avocado, add a small handful of alfalfa sprouts in the centre of the box then scatter the hemp seeds.

(Follow the same steps if you’re serving it for dinner, but simply serve onto a plate!)
