Fennel + Radish Citrus Salad

Celebrate spring with our fennel & radish citrus salad, fresh, zesty, and ready in 15 minutes. Fennel brings fibre, vitamin C and antioxidants to the mix, paired with radish, orange and dill for a burst of seasonal flavour.


INGREDIENTS

Salad ingredients:

  • 2 daikon radishes

  • Handful of normal radishes

  • 1 large fennel head

  • 2 oranges (cut into slices)

  • 1 head buttery lettuce

  • Small handful of fresh dill

Marmite Dressing: 

  • ¼ cup fresh orange juice

  • 1 tbsp maple syrup

  • 2 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • Pinch of cracked black pepper

METHOD

Prep the Fennel + radishes

  • Trim off the stalks and cut the fennel into quarters.

  • Remove the tough core from each quarter.

  • Slice thinly with a knife or mandolin.

  • Wash the radishes and remove the stems.

  • Slice thinly with a knife or mandolin.

Prepare the Lettuce:

  • Pull the lettuce leaves apart and wash them under cold water.

  • Pat them dry and add them to a large bowl.

Prepare the Oranges:

  • Peel the oranges and slice them into large rounds.

Assemble the Salad:

  • Add the fennel, radishes, and orange slices to the bowl with the lettuce.

  • Toss to combine.

Make the Dressing:

  • In a small jar with a lid, combine the orange juice, balsamic vinegar, Dijon mustard, maple syrup, and cracked black pepper.

  • Cover the jar and shake until well combined.

Dress the Salad:

  • Pour the dressing over the salad and toss gently to coat.
