Celebrate spring with our fennel & radish citrus salad, fresh, zesty, and ready in 15 minutes. Fennel brings fibre, vitamin C and antioxidants to the mix, paired with radish, orange and dill for a burst of seasonal flavour.
INGREDIENTS
Salad ingredients:
2 daikon radishes
Handful of normal radishes
1 large fennel head
2 oranges (cut into slices)
1 head buttery lettuce
Small handful of fresh dill
Marmite Dressing:
¼ cup fresh orange juice
1 tbsp maple syrup
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp Dijon mustard
Pinch of cracked black pepper
METHOD
Prep the Fennel + radishes
Trim off the stalks and cut the fennel into quarters.
Remove the tough core from each quarter.
Slice thinly with a knife or mandolin.
Wash the radishes and remove the stems.
Slice thinly with a knife or mandolin.
Prepare the Lettuce:
Pull the lettuce leaves apart and wash them under cold water.
Pat them dry and add them to a large bowl.
Prepare the Oranges:
Peel the oranges and slice them into large rounds.
Assemble the Salad:
Add the fennel, radishes, and orange slices to the bowl with the lettuce.
Toss to combine.
Make the Dressing:
In a small jar with a lid, combine the orange juice, balsamic vinegar, Dijon mustard, maple syrup, and cracked black pepper.
Cover the jar and shake until well combined.
Dress the Salad:
Pour the dressing over the salad and toss gently to coat.
