Ingredients:
For the salad:
1 can butter beans
1 jar pitted green olives
1 packet of merchant gourmet med style grains
1 small handful parsley
1 shallot, thinly sliced
For the dressing:
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp maple syrup
1 tsp dried oregano
Pinch of salt and pepper to taste
METHOD
Cook the Grains:
Cook the Merchant Gourmet Med Style Grains according to the package instructions. Once cooked, set aside to cool.
Prepare the Salad:
Drain and rinse the butter beans from the can.
Drain the green olives from the jar and slice them into halves or quarters.
Finely chop the parsley and set it aside.
Peel and thinly slice the shallot.
Make the Dressing:
In a small bowl or jar, combine the extra virgin olive oil, lemon juice, Dijon mustard, maple syrup, dried oregano, and a pinch of salt and pepper.
